Asian Week : Day 1 Cataloupe Juice (Filiphines)

Hello my cherries YEP IT'S BEEN A MONTH  that I don't visit here, but the last few days are so damn busy for me but now I finally end High School and I'm in vacation now so (YAY!) This week I'll be posting one recipe per day from foods that you find in Asian. I love asian foods(japanese and korean <3) but I never tried filipinos food so one day I go search on internet and sorry lots of recipes were pretty easy to make but hard to find the right ingredients (since I lived in a small city we just have two small asian stores) but I saw great recipes that one day I want to show for you guys!
Oh and did you saw that the IG account changes the name? Now I'll be posting more cool recipes sweets,weird/cool recipes and recipes from Brazil since I'm brazillian lol but don't worry the raw/vegan will be posted too!
But let's go to the recipe now, You will need a few ingredients:

1/4 of a super ripe cantaloupe melon
2 tbsp of sugar (i use demerara)
2 cups of water
LOTS OF ICE

With a fork you strip all the flesh but have to let a few pieces fall in the jar, the you add de sugar and mix this two really well (the melon will release all the juices) 



then you add water and ice stir a few and leave in the fridge for at least 2 hours for the juice become really orange and tasty.

Super chocolate muffins

Hello my sweeties! I know, it's been a while(20 days) since I post something here, but it's really difficult to me in the week to cook things more fancy and healthy. I won't lie for you guys I'm a bit overweight these week because of this. I'll try to put more post these weeks. Anyway so how are yo gus doing? I have a surprise to you.. do you like chocolate?do you like muffins? And If I tell that you can have both and more? Yeah Vegan super chocolate chips muffins. I'm not lying look how gorgeous they look.


They are so decadent and so yummy I made for a friend as a gift and my friend is chocoholic they have chocolate batter,melted chocolate and CHOCOLATE CHIPS and they're so yummy


Recipe (makes 10 big muffins)

200gr of dark chocolate 
1 cup of flour(all purpose,rice flour,wholewheat)
1/2 tspn baking soda
1 tspn baking powder
1/2 cup pure cocoa powder
1/2 cup of oil (canola,coconut i don't recommend olive oil)
4 tbspn of greek yogurt or sour cream
1 tspn of white vinegar
1 cup of the milk of your choice
3/4 cup of sugar of your choice (I use dark brown sugar)
a pinch of salt

Instructions
First let's melt 150gr of chocolate in bain marie it's easy you just need to put some water in a pan and bring to boil when it's boiling turn of the heat and put your bowl with chocolate in the pan but be carefull the bowl can't touch the boiling water.
The chocolate will melt slowly and just with the steam of the water, as chocolate is so delicate to use I don't like to use a microwave to melt him because I think that it makes the silkness of the chocolate really heavy and more dense and we don't want that (but maybe I am just crazy and you can melt in the microwave if you like feel free!)
So while your chocolate is melting you can sift all the dry ingredientes and mix well, and in the cup that you mesure your milk add the vinegar stir and let it seat for 5 minute this will created our vegan buttermilk that will make our muffin more silk and smooth.
After your chocolate melts stir well to dissolve any chocolate lumps and in the same bowl add the yogurt, oil stir well and the ‘’buttermilk’’ after and stir one more time.
Make a whole in the center of your bowl with the dry ingredients and trow the batter the baking soda+yogurt will created an reaction that will make the batter becomes really airy and bubbly so don’t worry!
Preaheat your oven to 200º C degrees, and line a muffin or cupcake pan with cups, my muffin pan was in my aunt house that day so I use singles ‘’empadinhas’’ pan, empadinhas is a savoury treat with a crumbly pastry and has a lot of differents fillings that have here in Brasil and they’re close to a muffin form.
Before you put your muffins in the over pick up the chocolate chips and put on the top of each muffin after you can put in the oven for about 15-20 minutes it depends of your oven.

They’re so freakin good and so cute , seriously guys you need to try to make this I try to describe the recipe as much detailed as I can, looks really difficult but it’s one of the most simple recipes that I made.
 I was inspired by the double chocolate muffin from Starbucks. Well  thank you guys!

Snack: Nana ice cream

Hello my sunshines! How are you today? Well I said that I'll make a series of snack/lunch that I ate in my examens week. So this recipe is the classical Nana Ice Cream or Nicecream, this "ice cream" is the key to not skipping your healthy diet it's fully raw,sugar free, gluten free,dairy-free and 100% natural. 



This is a bless of heaven for me in the hot afternoons now here,we're in Spring so the weather is starting  to change and it's  becoming  hot these days.
So let's go to the recipe

The regular base for any kind of nana ice cream:

2 frozen ripe bananas

A sweetner of your choice(dates,agave,stevia or honey)
2-3 tbsp of milk(oat,rice,almond,soy)

To make the base you just need to put all the ingredients in a blender or a food processor and mix until gets a creamy frozen consistence.

   The detox nana ice cream

1 kale

1 kiwi

1 apple 
1/2 lemon



                                                                                                                                                                                                                                                                                                                                                                  Super Berry nana ice cream

                                                                 5 strawberries

                                                                 6 blackberries

                                                                 4 raspberries



Tropical uh la la nana ice cream 

1/2 cup frozen mango

1/2 cup of fresh pinnapples

Mint leaves

If you guys want to make this more healthier you can add some seeds like chia,flex or hemp seeds. 
Instead of  milk you can change for water too and after you prepare feel free to add as much fruit as you want!

Vegan guava tart

Hello my sweeties!How are you?Well let's talk about this babie, I had some guavas in the fridge and I was thinking what can I do with them. So I was in the website from Bela Gil, if you do know her you must. She's  daughter of the great singer of brasillian popular music(MPB) Gilberto Gil and she's very popular in Brasil. She made a Guava Pie so I adapted a little bit because she made the filling with walnuts, but I think that nuts leave some taste and sometimes is not cool.
I'm sorry I made the tart and I don't take one single photo while I was making,but the results are pretty good. The only demage of this tart it's when you take off of the freezer you need to eat quickly, because the base got soft after put it back in the fridge the leftover tart. If you want to make the base gluten free or you don't to make you base soft: 1) You can make your base with soaked nuts and coconut oil  2)you can make a normal base but using gluten free flour instated.

The recipe make 6-8 medium slices.

For the base:
2 cups of rolled oats
2 tbsp of honey
1 tbsp of chia seeds
3 tbsp of oil (coconut,canola)
1 tspn of water

For the filling:
2 guavas
1/2 tbsp agar agar
1 cup of plant based yogurt
1/2 cup of sugar (I used demerara sugar)
1 cup of water


For the base:
In a food processor or blender, put the oats and crush until you get a fine dust. Then mix the remaining ingredients until you get a crumbly texture.Place in a pan with false bottom and bake for 10 minutes or until the edges become golden and brown.

For the filling:
Dilsove the agar agar and the sugar in the water and bring to boil fot 2-3 minutes. Blend the guavas until gets smooth and add the agar agar mixture, combine the yogurt and mix everything together.
Put the mix in the crust and leave 30 minutes to 1 hour in the freezer. Enjoy!

Snack recipes: Truffles with carob chia seed

Hello guys! So yeah...The week is ending and finally lack a few tests for me to do! Anyway this week I needed some snacks in moments of study not to follow the lazy and eat a lot of bread and chocolate. So I did three vegan snacks without sugar and that will leave you full all morning or afternoon in my case and they will be posted here and also posted on instagram.
I'm sorry guys for not post anything here in this whole week.. but I'm so tired I had 3 works and 10 tests this week, and I need to Prepare for the enem, the enem is a test that takes place every year in Brazil to help students earn scholarships at colleges or got the much desired vague in a federal college. So my life is a mess currently, though let's talk about these beauties
I know...carob truffles are already extremely popular but these truffles I added chia seeds to be able to keep you satiated for longer if that hunger happens at night, and you guys already thought to cover truffles with granola. My God is so good is to use a cool granola with many pieces that they will give a crunchy texture.


The Recipe is pretty simple you only need 3 ingredients and you can topped with anything that you like or have in your house.
Ingredients: (makes 6 little balls)
7 dates 
1 tbsp of carob powder
1 tsp of chia seeds
1 tsp of water
Toppings:-optional-
Coconut flakes, cracked walnuts and granola



Instructions:
If your dates are a bit hard to cut, leave fifteen minutes to soak in the water to let it softer. In a food processor place the dates and process pulsing well first and then for a few more minutes until they become a smooth and creamy. Mix the chia seeds and water and process a bit more last place carob powder and transfer to a bowl and leave 10 minutes in the freezer. Then and only shape into balls and place the cover on your preference.
Coconut flakes,carob powder,granola, nuts are really good options.


After I finished them I put in a air container and leave with me to the libary. They did not even last 2 hours I was craving by sugar so they were a great option and more healthy as well.

Passion fruit Mousse with chocolate shavings

Hi guys! So the recipe of toda, I've been craving about:A really creamy mousse.. but since I'm dairy intolerant, I unfortunally can't eat.(T-T) so this is a adapted version of many many many recipes that I've been trying. Passion Fruit mousse is pretty popular in Brazil, but the traditional mousse is made with heavy cream(or egg whites),condensed milk and passion fruit juice, but for do a good mousse is dificult because the condensed milk makes toomuch sweet and the heavy cream gives a heavy texture.
This recipe is vegan, gluten-free,dairy-free and it has a lightweight consistency.


Ingredients:
1 cup of passion fruit juice (2 passion fruits)
1 cup of water
1 tsp of agar agar
3/4 cup of sugar(any kind of sugar is OK i use demerara sugar)
1 cup of soy cream or plant based yogurt

Instructions.
Make the passion fruit juice and Strain the juice and set aside. In a saucepan dissolve the agar agar with water and sugar. On medium heat stir until the sugar dissolves and then over high heat let the agar agar boil for two minutes turn off the heat and let it cool.
Mix the juice,the agar agar and the cream or yogurt in a blender.
Blend for 2-5 minutes until  the mixture becomes aerated, put in a beautiful bowl or in separeted cups and let in the fridge for 4 hours.
Tip: If you want more deliciouness you can put some digestive biscuits in the bottom of the bowl.
On top I used dark brown chocolate shavings, but a good option and more low calorie will be a fruit passion jam or a berrie jam will be nice too!

Breakfast:Chia pudding with strawbeery Jam

Hey there!So I was yesterday trying to think in something to do in today's breakfast when I saw a video from the channel I could kill for a desert, for you guys that don't it's a website from a confectioner called Daniele Noce, and she teached how to make a chia pudding with coconut milk and raspeberry jam so I adapted the recipe and the result were great!



Ingredients

For the pudding:
1 tbsp of chia seeds
1/2 cup of soy milk
1/4 cup of yogurt
A few drops of vanilla extract ou vanilla beans

For the jam:
5-6 strawberries
1/2 tspn of agar-agar
2 tbsp of any kind of sweetner(honey,agave,refined sugar,demerara sugar)
1 cup of water

Instructions: 

For the jam, mixture the agar-agar with the water in medium heat until boil. When it boils let sit for about 2-3 minutes and turn off the heat. Mash the strawberries and add to the agar-agar with the sweetner and mix until everything is all combine.

The agar agar it's a natural gelatine made from algues and it's really healthy.Then sit the mixture in the freezer for 10 minutes.
To make the chia pudding mix all of ingredients in a jar and guys seriously LET'S BURN SOME FAT shake it well and sit for 10 minutes.
Then all you need is find some cute jar,bowl or you can be a little fancy like me lol
